This Cherry wood is from some beautiful trees taken down in the South Waikato town of Tirau. The Cherry is an ornamental tree, meaning that it flowers rather than fruits.

Cherry has a sweet, mild flavour that goes very well with virtually everything. This is one of the most popular woods for smoking. It also adds beautiful colour to smoked meats.

It’s important to note that this tree was not from an orchard and has never been sprayed or fumigated.
